Ingredients

- 1 lb Boneless chicken (breast or thighs)
- 1 can Coconut milk
- 3 cloves Fresh garlic, minced
- 1 inch Fresh ginger, grated
- 1 Onion, diced
- 2 Tomatoes, chopped
- 2 tsp Cumin
- 2 tsp Coriander
- 1 tsp Turmeric
- 2 tsp Garam masala
- Fresh cilantro, for garnish
- Optional: 1 cup Vegetables (bell peppers or peas)
Instructions
- Marinate the chicken with yogurt, garlic, ginger, and spices. Let sit for at least 30 minutes.
- Sauté diced onion in oil over medium heat until golden. Add garlic and ginger.
- Add the marinated chicken and cook until golden brown.
- Incorporate chopped tomatoes and spices, allowing to meld together.
- Pour in the coconut milk and stir to combine, then simmer to thicken.
- Finish with fresh cilantro just before serving.
