Ingredients

  • 1 lb Boneless chicken (breast or thighs)
  • 1 can Coconut milk
  • 3 cloves Fresh garlic, minced
  • 1 inch Fresh ginger, grated
  • 1 Onion, diced
  • 2 Tomatoes, chopped
  • 2 tsp Cumin
  • 2 tsp Coriander
  • 1 tsp Turmeric
  • 2 tsp Garam masala
  • Fresh cilantro, for garnish
  • Optional: 1 cup Vegetables (bell peppers or peas)

Instructions

  1. Marinate the chicken with yogurt, garlic, ginger, and spices. Let sit for at least 30 minutes.
  2. Sauté diced onion in oil over medium heat until golden. Add garlic and ginger.
  3. Add the marinated chicken and cook until golden brown.
  4. Incorporate chopped tomatoes and spices, allowing to meld together.
  5. Pour in the coconut milk and stir to combine, then simmer to thicken.
  6. Finish with fresh cilantro just before serving.
