  • 2 lbs boneless, skinless chicken thighs
  • 1 cup yogurt
  • 1 can (15 oz) crushed tomatoes
  • 4 tbsp real butter
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp paprika
  • 2 tsp garam masala
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the Chicken: Mix chicken with yogurt, garlic, ginger, and spices. Let it marinate for at least 1 hour, ideally overnight.
  2. Sauté the Chicken: Heat oil in a skillet over medium-high heat. Add the marinated chicken and brown on all sides.
  3. Make the Sauce: Remove the chicken and add butter to the same pan. Add more garlic and ginger, followed by crushed tomatoes. Simmer for a few minutes.
  4. Combine and Simmer: Return the chicken to the skillet, add heavy cream, and adjust consistency with a splash of water. Simmer for 15-20 minutes.
  5. Garnish and Serve: Finish with fresh cilantro. Serve with steamed basmati rice or warm naan.

Notes

For a lower-calorie option, use coconut milk instead of heavy cream. Marinating the chicken is essential for tenderness and flavor.
