Description

Delicious homemade chocolate croissants with flaky layers and rich chocolate filling, perfect for brunch or a cozy morning treat.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 1 1/4 cups whole milk (or dairy-free milk)
  • 1 cup unsalted butter, cold
  • 1/2 cup dark or semi-sweet chocolate, chopped

Instructions

  1. Mix the dough: In a bowl, combine flour, sugar, yeast, and salt. Slowly add warm milk and softened butter, mixing until a dough forms. Knead it for about 5 minutes until smooth.
  2. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm area until it doubles in size (about 1-2 hours).
  3. Prepare the butter layer: Pound cold butter into a rectangle between two sheets of parchment paper.
  4. Roll the dough out into a rectangle, place the butter square in the center, and fold the dough over the butter to encase it. Roll it out and fold it into thirds.
  5. Refrigerate the dough for 30 minutes to keep the butter cold.
  6. Repeat the rolling and folding process three more times, chilling in between.
  7. Cut the dough into triangles. Place chocolate pieces on the wide ends and roll them towards the point.
  8. Place the croissants on a lined baking tray and let them rise again for about one hour.
  9. Preheat the oven to 400°F (200°C). Brush the croissants with a beaten egg and bake for 15-20 minutes until puffed and golden brown.
  10. Cool slightly before serving. Best enjoyed warm!

Notes

Ensure your butter remains cold throughout the lamination process for best flakiness.
