- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet active dry yeast
- 1 teaspoon salt
- 1 1/4 cups whole milk (or dairy-free milk)
- 1 cup unsalted butter, cold
- 1/2 cup dark or semi-sweet chocolate, chopped
Instructions
- Mix the dough: In a bowl, combine flour, sugar, yeast, and salt. Slowly add warm milk and softened butter, mixing until a dough forms. Knead it for about 5 minutes until smooth.
- Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm area until it doubles in size (about 1-2 hours).
- Prepare the butter layer: Pound cold butter into a rectangle between two sheets of parchment paper.
- Roll the dough out into a rectangle, place the butter square in the center, and fold the dough over the butter to encase it. Roll it out and fold it into thirds.
- Refrigerate the dough for 30 minutes to keep the butter cold.
- Repeat the rolling and folding process three more times, chilling in between.
- Cut the dough into triangles. Place chocolate pieces on the wide ends and roll them towards the point.
- Place the croissants on a lined baking tray and let them rise again for about one hour.
- Preheat the oven to 400°F (200°C). Brush the croissants with a beaten egg and bake for 15-20 minutes until puffed and golden brown.
- Cool slightly before serving. Best enjoyed warm!
