Ingredients

  • 1 cup Fresh Mint Leaves, finely chopped
  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • 3/4 cup Granulated Sugar
  • 1 cup Dark Chocolate Chips
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt

Instructions

  1. Prepare the Mint Infusion: Rinse mint leaves and finely chop. In a saucepan, combine heavy cream and whole milk, then add mint. Simmer, then remove from heat and steep for 30 minutes.
  2. Combine Ingredients: Strain the mint mixture, return to the saucepan, and add sugar, salt, and vanilla extract. Stir until sugar dissolves.
  3. Chill the Mixture: Let it cool to room temperature, cover, and refrigerate for at least 4 hours.
  4. Churn the Ice Cream: Pour the mixture into an ice cream maker and churn as per instructions.
  5. Fold in Chocolate: Gently add dark chocolate chips to the churned ice cream.
  6. Freeze to Set: Transfer to an airtight container, cover with plastic wrap, and freeze until solid (4-6 hours).
  7. Scoop and Enjoy: Allow to sit at room temperature for 5-10 minutes before scooping.

Notes

For a dairy-free version, use oat or almond milk. Adjust sweetness with honey or maple syrup if desired.
