- 1 lb boneless, skinless chicken (breast or thighs)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup heavy cream or dairy-free alternative
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup frozen peas or carrots (optional)
- 1 tsp fresh thyme or parsley, chopped
- Salt and pepper, to taste
- 1/2 tsp paprika (optional)
- 1 tbsp olive oil for sautéing
Instructions
- Select the sauté function on your Instant Pot. Add olive oil, letting it heat up before adding minced garlic and diced onions. Cook for 2-3 minutes until fragrant.
- Add the chicken pieces, seasoned with salt and pepper. Sear them for about 5 minutes on each side until golden.
- Stir in the rice, ensuring it’s coated in the aromatic oil, then pour in the chicken broth. Scrape any browned bits off the bottom of the pot.
- Seal the lid and set it to pressure cook for 10 minutes. Allow for a natural release for 10 minutes, then quick release the remaining pressure.
- Add your cream (or alternative) and the fresh herbs. Stir until well combined.
- Dish up the creamy chicken and rice in warm bowls and garnish with more fresh herbs if desired.
Notes
For a vegetarian option, replace chicken with tofu or chickpeas, and use vegetable broth. Be cautious not to overfill the Instant Pot.
