Description

A warm and comforting dish that combines juicy chicken, creamy rice, and flavorful herbs, all made effortlessly in the Instant Pot.


Ingredients

  • 1 lb boneless, skinless chicken (breast or thighs)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup heavy cream or dairy-free alternative
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas or carrots (optional)
  • 1 tsp fresh thyme or parsley, chopped
  • Salt and pepper, to taste
  • 1/2 tsp paprika (optional)
  • 1 tbsp olive oil for sautéing

Instructions

  1. Select the sauté function on your Instant Pot. Add olive oil, letting it heat up before adding minced garlic and diced onions. Cook for 2-3 minutes until fragrant.
  2. Add the chicken pieces, seasoned with salt and pepper. Sear them for about 5 minutes on each side until golden.
  3. Stir in the rice, ensuring it’s coated in the aromatic oil, then pour in the chicken broth. Scrape any browned bits off the bottom of the pot.
  4. Seal the lid and set it to pressure cook for 10 minutes. Allow for a natural release for 10 minutes, then quick release the remaining pressure.
  5. Add your cream (or alternative) and the fresh herbs. Stir until well combined.
  6. Dish up the creamy chicken and rice in warm bowls and garnish with more fresh herbs if desired.

Notes

For a vegetarian option, replace chicken with tofu or chickpeas, and use vegetable broth. Be cautious not to overfill the Instant Pot.
