Ingredients

- 1 lb boneless chicken breasts or thighs
- 1 cup Greek yogurt or sour cream
- 1 medium cucumber, finely grated
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Mixed greens for serving
Instructions
- Season the chicken with salt, pepper, and olive oil. Cook on the grill or in a skillet over medium heat until golden brown and cooked through, about 5-7 minutes per side.
- Prepare the tzatziki by combining Greek yogurt, grated cucumber (drained), minced garlic, chopped herbs, lemon juice, and olive oil in a bowl. Season to taste with salt and pepper.
- Dice the cooked chicken into bite-sized pieces and fold into the tzatziki mixture until evenly coated.
- Taste and adjust seasoning with more herbs or salt if necessary.
- Serve on a bed of mixed greens or with warm pita bread.
Notes
Marinate the chicken for at least 30 minutes before cooking for enhanced flavor and juiciness. Use drained cucumbers to prevent the dressing from becoming watery.
