  • 2 cloves fresh garlic, minced
  • 1 cup button or cremini mushrooms, chopped
  • 4 oz cream cheese
  • 1/4 cup fresh herbs (parsley, dill, or chives), chopped
  • 1/2 cup plain or seasoned bread crumbs
  • 2 tbsp butter, melted
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. Melt a tablespoon of butter in a skillet over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  3. Add chopped mushrooms and cook until they soften and release their moisture, about five minutes. Season with salt and pepper.
  4. Remove the skillet from heat and let cool slightly. In a mixing bowl, combine the mushroom mixture, cream cheese, fresh herbs, and bread crumbs. Mix until well incorporated.
  5. Stuff each shrimp with a generous amount of the mushroom mixture, gently pressing it in. Place the filled shrimp in the prepared baking dish and drizzle with additional melted butter.
  6. Bake in the preheated oven for 15-20 minutes, or until the shrimp are opaque and cooked through.
  7. Serve warm with lemon wedges on the side.
