- 2 lbs boneless, skinless chicken (breast or thighs)
- 8 oz button or cremini mushrooms, sliced
- 1 cup heavy cream or cream cheese
- 4 cloves fresh garlic, minced
- 1 tsp dried thyme or oregano
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Optional: spinach or zucchini
Instructions
- Preheat your oven to 375°F (190°C).
- Season your chicken with salt and pepper, then cook it in a skillet over medium heat until golden brown.
- Sauté the sliced mushrooms in the same skillet until golden, about 5–7 minutes, adding the minced garlic halfway through.
- Combine the cooked chicken and sautéed mushrooms in a bowl, then fold in the cream or cream cheese and herbs.
- Transfer the mixture into a greased baking dish and top with the cheeses.
- Bake for approximately 25–30 minutes, or until bubbly and golden.

Notes
For a vegetarian version, substitute chicken with tofu or tempeh. Use almond milk or coconut cream for a dairy-free option.
