  • 2 cups whole milk (or almond/oat milk)
  • 2 tablespoons brewed jasmine tea (or jasmine extract)
  • 1 tablespoon sugar (or coconut sugar)
  • 2 cups fresh green grapes
  • 1 tablespoon lemon juice
  • Powdered sugar, for garnish

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and steeped jasmine tea to form a smooth batter.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour in a small amount of batter, swirling to coat the bottom. Cook until the edges lift, then flip and cook for another minute. Remove and cool on a wire rack.
  3. Repeat until all batter is used, placing parchment paper between crepes to prevent sticking.
  4. For filling, blend fresh green grapes with sugar and lemon juice until smooth (add whipped cream for richness, if desired).
  5. To assemble, layer a crepe on a clean surface, spread with grape filling, and top with another crepe. Repeat until all crepes are stacked.
  6. Chill in refrigerator for at least 1 hour to set. Slice and garnish with fresh grapes and powdered sugar before serving.

Notes

Allow crepes to cool completely before layering to avoid melting the filling. Serve chilled for best flavor.
