- 1 box Jiffy corn muffin mix
- 1 can sweet corn, drained
- 1 cup sour cream
- 2 large eggs, beaten
- 1/2 cup unsalted butter, melted
- Optional add-ins: shredded cheese, sautéed peppers, spices
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Combine the Jiffy corn muffin mix, sweet corn, sour cream, beaten eggs, and melted butter in a mixing bowl and mix until fully incorporated.
- Fold in any optional add-ins if desired.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
Don’t overmix the batter; a few lumps are fine for a light and fluffy texture. Allow the casserole to rest for a few minutes after baking for easier cutting.
