  • 1 can sweet corn, drained
  • 1 cup sour cream
  • 2 large eggs, beaten
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine the Jiffy corn muffin mix, sweet corn, sour cream, beaten eggs, and melted butter in a mixing bowl and mix until fully incorporated.
  3. Fold in any optional add-ins if desired.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
