Ingredients

- 1 lb skirt steak
- 1 cup couscous (medium or pearl)
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh basil, chopped
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine olive oil, minced garlic, lemon juice, chopped herbs, salt, and pepper. Add the skirt steak and marinate for at least 30 minutes.
- In a saucepan, bring water to a boil. Add couscous, stir once, cover, and let sit for about 5 minutes before fluffing with a fork.
- Preheat the grill over medium-high heat and grill the marinated steak for about 3-4 minutes on each side for medium-rare.
- Mix in additional olive oil, herbs, and lemon zest into the fluffed couscous.
- Let the steak rest for 5 minutes before slicing against the grain and serving alongside the couscous.
Notes
Ensure to let the steak rest after cooking to retain juices. You can substitute couscous with quinoa for a gluten-free option.
