- 4 Bone-in, skin-on chicken thighs
- 4 tablespoons unsalted butter
- 2 fresh lemons (zest and juice)
- 4 cloves garlic (minced)
- 2 tablespoons fresh rosemary or thyme (chopped)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken thighs dry with paper towels and season generously with salt and pepper.
- In a large skillet over medium heat, melt the butter and add minced garlic; cook until fragrant (about 1 minute).
- Add the chicken, skin-side down, and sauté for 5-7 minutes until golden brown. Flip so the skin is facing upwards.
- Zest and juice the lemons into the skillet, adding fresh herbs; let flavors mingle for a couple of minutes.
- Transfer skillet to the preheated oven and bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest before serving. Spoon the buttery lemon sauce over each piece and garnish with fresh parsley if desired.
Notes
Don’t skip the resting step to ensure juicy chicken. Using a cast-iron skillet will give a lovely sear.
