Instructions
- Char the cabbage by heating a skillet over medium-high heat with olive oil. Add cabbage sliced into wedges and let it sit to develop a char.
- Cook the garlic, adding it to the pan once the cabbage is charred, and cook until fragrant.
- Prepare the white bean purée by blending white beans, lemon juice, and vegetable broth until smooth. Season with salt and pepper.
- Plate a spoonful of the white bean purée and top it with charred cabbage. Garnish with fresh herbs and a squeeze of lemon.
