Ingredients

  • 2 tablespoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.
  3. Add the fresh lemon zest and juice into the mixture.
  4. Mix in the egg yolks and vanilla extract until well combined.
  5. In another bowl, whisk together the flour and salt. Gradually blend into the wet mixture until just combined.
  6. Scoop rounded balls of dough onto the prepared baking sheet, about 2 inches apart.
  7. Bake for 12-15 minutes, or until set and lightly golden around the edges.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Dust with powdered sugar while still warm.
