Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.
- Add the fresh lemon zest and juice into the mixture.
- Mix in the egg yolks and vanilla extract until well combined.
- In another bowl, whisk together the flour and salt. Gradually blend into the wet mixture until just combined.
- Scoop rounded balls of dough onto the prepared baking sheet, about 2 inches apart.
