Instructions
- Prepare a baking sheet by lining it with parchment paper.
- Mix the nut butter, honey or maple syrup, lemon juice, lemon zest, and vanilla extract in a bowl.
- Combine the oats and sea salt in a separate bowl, then add to the wet ingredients.
- Form small patties or balls from the mixture and place them on the prepared baking sheet.
- Chill the cookies in the refrigerator for at least 30 minutes.

Notes
For a nut-free version, use sunflower seed butter. Adding more oats can help if the mixture is too sticky.
