A delightful and elegant weeknight dinner featuring salmon marinated in lemon and roasted with crispy capers.

- 4 skin-on salmon fillets
- 2 lemons (juiced and zested)
- 1/4 cup non-pareil capers
- 2 tablespoons extra virgin olive oil
- 1 teaspoon fresh black pepper
- 1 teaspoon sea salt
- Fresh herbs (parsley or dill) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the baking sheet by lining it with parchment paper or foil.
- Marinate the salmon by combining lemon juice, lemon zest, olive oil, salt, and black pepper; coat the fillets for at least 15 minutes.
- Rinse the capers under cold water and pat dry.
- Arrange the marinated salmon fillets on the prepared baking sheet, skin side down.
- Add the capers around the salmon before baking.
- Roast for 12-15 minutes, until the salmon flakes easily and the capers are golden.
- Finish with a drizzle of olive oil and lemon wedges.
- Serve with capers on top and garnish with fresh herbs.
Notes
Make sure not to overcook the salmon; an internal temperature of 125°F (52°C) for medium-rare is ideal. Leftovers can be stored for up to three days in the refrigerator.
