Ingredients

  • 4 skin-on salmon fillets
  • 2 lemons (juiced and zested)
  • 1/4 cup non-pareil capers
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh black pepper
  • 1 teaspoon sea salt
  • Fresh herbs (parsley or dill) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the baking sheet by lining it with parchment paper or foil.
  3. Marinate the salmon by combining lemon juice, lemon zest, olive oil, salt, and black pepper; coat the fillets for at least 15 minutes.
  4. Rinse the capers under cold water and pat dry.
  5. Arrange the marinated salmon fillets on the prepared baking sheet, skin side down.
  6. Add the capers around the salmon before baking.
  7. Roast for 12-15 minutes, until the salmon flakes easily and the capers are golden.
  8. Finish with a drizzle of olive oil and lemon wedges.
  9. Serve with capers on top and garnish with fresh herbs.

Notes

Make sure not to overcook the salmon; an internal temperature of 125°F (52°C) for medium-rare is ideal. Leftovers can be stored for up to three days in the refrigerator.
