  • 1 cup bell peppers, sliced
  • 4 oz vermicelli noodles (optional)
  • 1/2 cup hoisin sauce
  • 1/4 cup peanut sauce
  • 1 tbsp sriracha (optional)

Instructions

  1. Prepare the Beef: In a skillet over medium-high heat, add a splash of oil and the thinly sliced beef. Sauté for about 3-4 minutes until browned. Toss in the minced lemongrass along with a bit of soy sauce and cook for an additional minute to infuse the flavors. Remove from heat and let it cool.
  2. Chop the Vegetables: While the beef cools, thinly slice your choice of vegetables. Carrots should be julienned for a pleasing texture. Cucumber can be sliced into thin matchsticks for a refreshing crunch.
  3. Soak the Rice Paper: Fill a shallow dish with warm water. One at a time, dip the rice paper for about 10-15 seconds until pliable, then lay it on a clean surface.
  4. Assemble the Rolls: Place a small handful of beef, noodles, and assorted vegetables in the center of each rice paper. Add a few sprigs of fresh herbs. Fold the sides over the filling, then gently roll it up like a burrito, ensuring it’s snug and secure.
  5. Prepare the Dipping Sauce: In a small bowl, mix equal parts of hoisin and peanut sauce. Add a kick of sriracha if you’re feeling adventurous!
