- 8 oz cream cheese, softened
- 1 cup cooked bacon, chopped (or turkey bacon)

- 1/2 tsp nutmeg
- 1 cup mini marshmallows (optional)
Instructions
- Prep the Sweet Potatoes: Peel and cut sweet potatoes into chunks. Boil in salted water for about 20 minutes until soft. Drain and let cool.
- Sauté the Mushrooms: Heat olive oil in a skillet over medium heat. Add sliced mushrooms, seasoning with salt and pepper, and sauté until golden brown, about 8-10 minutes. Set aside.
- Mix the Base: In a large bowl, combine cooled sweet potatoes, cream cheese, eggs, brown sugar (or maple syrup), and spices. Mash until smooth with tiny lumps for texture.
- Combine Ingredients: Fold in the sautéed mushrooms and 1 cup of bacon, reserving some for topping.
- Transfer to Casserole Dish: Spoon the mixture into a greased 9×13 casserole dish, spreading evenly.
- Top It Off: Sprinkle mini marshmallows over the top along with remaining bacon.
- Bake: Preheat oven to 350°F (175°C) and bake uncovered for 25-30 minutes until hot and marshmallows are golden brown.
- Serve: Allow sitting for a few minutes before serving.
Notes
For a healthier version, consider using turkey bacon and adjust the sugar to taste. Broil the marshmallows for a crispy topping at the end.
