Instructions

  1. Prep the Sweet Potatoes: Peel and cut sweet potatoes into chunks. Boil in salted water for about 20 minutes until soft. Drain and let cool.
  2. Sauté the Mushrooms: Heat olive oil in a skillet over medium heat. Add sliced mushrooms, seasoning with salt and pepper, and sauté until golden brown, about 8-10 minutes. Set aside.
  3. Mix the Base: In a large bowl, combine cooled sweet potatoes, cream cheese, eggs, brown sugar (or maple syrup), and spices. Mash until smooth with tiny lumps for texture.
  4. Combine Ingredients: Fold in the sautéed mushrooms and 1 cup of bacon, reserving some for topping.
  5. Transfer to Casserole Dish: Spoon the mixture into a greased 9×13 casserole dish, spreading evenly.
  6. Top It Off: Sprinkle mini marshmallows over the top along with remaining bacon.
