A unique and surprising take on tiramisu featuring cauliflower cake layers, espresso, and mascarpone.
Ingredients

- 1 head Cauliflower, cut into florets
- 8 oz Cream Cheese, full-fat
- 8 oz Mascarpone Cheese
- 1 cup Heavy Cream
- 1 cup Espresso or strong coffee
- 3 tbsp Unsweetened Cocoa Powder
- Sweetener to taste (erythritol or stevia)
- 1 tsp Pure Vanilla Extract
Instructions
- Preheat oven to 400°F (200°C). Toss cauliflower in olive oil, sprinkle with salt, and roast for 25-30 minutes until tender.
- Allow cauliflower to cool, then blend until smooth. Whip heavy cream until soft peaks form, and fold in cream cheese, mascarpone, and sweetener to the blended cauliflower.
- Brew espresso and let cool. Dip ladyfingers or low-carb alternatives in coffee briefly.
- In a dish, layer cauliflower mixture, then coffee-soaked cookies. Repeat until ingredients are finished, ending with cauliflower mixture.
- Cover and chill for at least 4 hours or overnight. Dust with cocoa before serving.
Notes
For a more sophisticated flavor, consider adding coffee liqueur to the coffee or folding in grated chocolate to the cauliflower mixture.
