Description

A unique and surprising take on tiramisu featuring cauliflower cake layers, espresso, and mascarpone.


Ingredients

Scale
  • 1 head Cauliflower, cut into florets
  • 8 oz Cream Cheese, full-fat
  • 8 oz Mascarpone Cheese
  • 1 cup Heavy Cream
  • 1 cup Espresso or strong coffee
  • 3 tbsp Unsweetened Cocoa Powder
  • Sweetener to taste (erythritol or stevia)
  • 1 tsp Pure Vanilla Extract

Instructions

  1. Preheat oven to 400°F (200°C). Toss cauliflower in olive oil, sprinkle with salt, and roast for 25-30 minutes until tender.
  2. Allow cauliflower to cool, then blend until smooth. Whip heavy cream until soft peaks form, and fold in cream cheese, mascarpone, and sweetener to the blended cauliflower.
  3. Brew espresso and let cool. Dip ladyfingers or low-carb alternatives in coffee briefly.
  4. In a dish, layer cauliflower mixture, then coffee-soaked cookies. Repeat until ingredients are finished, ending with cauliflower mixture.
  5. Cover and chill for at least 4 hours or overnight. Dust with cocoa before serving.

Notes

For a more sophisticated flavor, consider adding coffee liqueur to the coffee or folding in grated chocolate to the cauliflower mixture.
