Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and nutmeg.
- Cream the wet ingredients: In another large bowl, combine applesauce, melted butter (or coconut oil), and vanilla extract. Mix until smooth.
- Combine the mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Scoop onto the baking sheet using a cookie scoop or spoon, leaving space for them to spread.
- Bake for about 12-15 minutes, or until the edges are golden and the centers are set.
