- 4 barramundi fillets
- 1 cup macadamia nuts, finely chopped
- 1/4 cup unsalted butter, melted
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped (or herbs of your choice)
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the macadamia nuts by placing them in a food processor and pulsing until finely chopped.
- Mix the chopped nuts with melted butter, minced garlic, and fresh herbs in a mixing bowl.
- Lay the barramundi fillets on a baking sheet lined with parchment paper. Squeeze fresh lemon juice over them and season with salt and pepper.
- Spoon the macadamia mixture generously over each fillet, pressing down to adhere.
- Bake for about 12–15 minutes, or until the fish flakes easily and the crust is golden brown.
- Allow to rest for a few minutes, garnish with fresh herbs or lemon slices, and serve with your favorite side dishes.
