Ingredients

  • 2 barramundi fillets
  • 1 cup macadamia nuts, unsalted
  • 1 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 2 tablespoons olive oil
  • Zest and juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your crust by blending macadamia nuts, panko breadcrumbs, minced garlic, and a pinch of salt in a food processor.
  3. Pat the barramundi fillets dry and season them with salt and pepper.
  4. Drizzle olive oil over the fillets and press the macadamia mixture onto the top of each fillet.
  5. Bake in the preheated oven for 12-15 minutes until the fish flakes easily and the crust is golden brown.
