- 2 barramundi fillets
- 1 cup macadamia nuts, unsalted
- 1 cup panko breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley or cilantro, chopped
- 2 tablespoons olive oil
- Zest and juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare your crust by blending macadamia nuts, panko breadcrumbs, minced garlic, and a pinch of salt in a food processor.
- Pat the barramundi fillets dry and season them with salt and pepper.
- Drizzle olive oil over the fillets and press the macadamia mixture onto the top of each fillet.
- Bake in the preheated oven for 12-15 minutes until the fish flakes easily and the crust is golden brown.
- Garnish with fresh lemon juice and chopped herbs before serving.
