Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease lightly.
- Combine the pancake mix, chopped bacon, and any optional ingredients in a large mixing bowl.
- Whisk together the milk, eggs, and melted butter in a separate bowl, then pour into the dry ingredients, stirring gently until just combined.
- Bake for 15-20 minutes or until a toothpick comes out clean. The muffins should be golden brown.
- Cool in the muffin tin for a few minutes before transferring to a wire rack and drizzle with more maple syrup before serving.
