- 1 fully cooked, bone-in ham (8–10 pounds)
- 1 cup pure maple syrup
- ½ cup bourbon
- ½ cup brown sugar
- 2 minced garlic cloves
- 1 teaspoon ground cloves
- 1 teaspoon Dijon or yellow mustard
- ½ teaspoon black pepper
Instructions
- Prep the ham by letting it sit at room temperature for 30 minutes and preheating your oven to 325°F (165°C).
- Make the glaze by combining maple syrup, bourbon, brown sugar, garlic, and cloves in a saucepan. Cook until the sugar dissolves, about 10 minutes.
- Score the ham in a diamond pattern to help the glaze penetrate.
- Apply half the glaze over the ham, working it into the scored areas.
- Bake the ham covered loosely with foil for 1.5 to 2 hours, basting every 30 minutes. Remove foil for the last 30 minutes to caramelize.
- Serve after letting it rest for 20 minutes before slicing.
Notes
Substitutions for bourbon can be apple cider or ginger ale. Make sure to score the ham to enhance flavor absorption.
