Ingredients

- 1 cup feta or mozzarella cheese, cut into cubes
- ½ cup sliced salami or pepperoni
- ½ cup pitted green olives or Kalamata olives
- 1 cup extra virgin olive oil
- 2–3 cloves fresh minced garlic
- 1 tablespoon fresh thyme, basil, or oregano
- Pinch of red pepper flakes (optional)
Instructions
- Prepare the cheese by cutting it into bite-sized cubes.
- In a bowl, whisk together the olive oil, minced garlic, and herbs.
- Toss the cheese cubes, salami slices, and olives with the marinade until well coated.
- Transfer to a glass jar or airtight container and let marinate in the fridge for at least 2 hours (overnight is better).
- Serve the marinated cheese and olives on a platter with toothpicks on the side.
