  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1/2 cup Chicken Broth
  • Salt and Pepper to taste

Instructions

  1. Marinate the pork: In a large bowl, whisk together minced garlic, honey, olive oil, lemon juice, rosemary, thyme, salt, and pepper. Add the pork tenderloin and coat it well. Let it marinate in the refrigerator for at least one hour; overnight is even better.
  2. Preheat the oven: Preheat your oven to 400°F (200°C).
  3. Sear the pork: In a large oven-safe skillet, heat more olive oil over medium-high heat. Add the marinated pork tenderloin to the skillet. Sear on all sides until browned (3-4 minutes per side).
  4. Roast in the oven: Transfer the skillet to the preheated oven and roast for about 20-25 minutes until it reaches 145°F (63°C).
  5. Rest and slice: Remove from the oven and let the pork rest for 5-10 minutes. Slice into medallions and serve with drizzled pan juices.
