Instructions

  1. Prepare the Marinade: In a bowl, whisk together minced garlic, Dijon mustard, honey, olive oil, sea salt, black pepper, and your choice of fresh herbs. Let that sit while you prepare the tenderloin.
  2. Marinate the Pork: Trim any excess fat from the pork tenderloin and place it in a resealable bag or dish. Pour the marinade over the meat, ensuring it’s well-coated. Let it marinate in the refrigerator for at least an hour, or ideally overnight for the best flavor.
  3. Sear: Preheat your oven to 400°F (200°C). Heat a skillet over medium-high heat and add a touch of olive oil. Once hot, place the marinated tenderloin in the skillet, searing all sides until golden brown, about 2-3 minutes per side.
