- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh dill or parsley, chopped
- 2 large eggs
- 1 cup bread crumbs
- Olive oil for sautéing
Instructions
- Prepare the spinach and onions: Wash the spinach leaves and chop them coarsely. In a skillet, heat olive oil over medium heat and sauté the onions until golden, about 5-7 minutes. Add the chopped spinach and cook until wilted.
- Mix with herbs and cheese: Remove from heat and stir in minced garlic, crumbled feta, and chopped herbs. Blend until evenly mixed.
- Bind with eggs and breadcrumbs: In a bowl, whisk together the eggs and fold them into your mixture along with the breadcrumbs.
- Form and cook the crisps: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Scoop spoonfuls of the mixture, shape into flat discs, and place on the sheet. Bake for 20-25 minutes, turning halfway through, until golden.
- Cool and serve: Let them cool slightly before serving warm or at room temperature.
Notes
Don’t overcook the spinach, and squeeze excess moisture to retain crispiness. Perfect for appetizers or snacks.
