  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill or parsley, chopped
  • 2 large eggs
  • 1 cup bread crumbs
  • Olive oil for sautéing

Instructions

  1. Prepare the spinach and onions: Wash the spinach leaves and chop them coarsely. In a skillet, heat olive oil over medium heat and sauté the onions until golden, about 5-7 minutes. Add the chopped spinach and cook until wilted.
  2. Mix with herbs and cheese: Remove from heat and stir in minced garlic, crumbled feta, and chopped herbs. Blend until evenly mixed.
  3. Bind with eggs and breadcrumbs: In a bowl, whisk together the eggs and fold them into your mixture along with the breadcrumbs.
  4. Form and cook the crisps: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Scoop spoonfuls of the mixture, shape into flat discs, and place on the sheet. Bake for 20-25 minutes, turning halfway through, until golden.
  5. Cool and serve: Let them cool slightly before serving warm or at room temperature.
