- 2 large yellow onions, sliced

- 4 cups low-sodium beef broth

Instructions
- Mix your meat: In a large mixing bowl, combine the ground beef, ground pork, chopped onions, minced garlic, bread crumbs, grated Parmesan, thyme, salt, and pepper. Use your hands to mix gently until just combined.
- Form and brown the meatballs: Shape the mixture into meatballs about 1 to 1.5 inches in diameter. Heat a skillet over medium-high heat, adding a splash of oil. Carefully add the meatballs, browning them on all sides (about 3-4 minutes), then transfer them to the crock pot.
- Sauté the onions: In the same skillet used for the meatballs, add a bit more oil if needed. Toss in sliced onions and a sprinkle of salt, cooking them until caramelized and golden brown (about 10-12 minutes).
- Deglaze the pan: Pour a splash of beef broth into the skillet, scraping the bottom to release those delicious bits. This adds flavor and richness to the broth in your crock pot.
- Combine: Pour the sautéed onions and deglazed liquid over the meatballs in the crock pot. Then, add the remaining beef broth, ensuring that meatballs are mostly submerged.
- Set your crock pot: Cover and cook on low for 6-8 hours or on high for about 4 hours.
- Serve with cheese: About 15 minutes before serving, sprinkle shredded cheese over the meatballs and cover. Let it melt beautifully.
