Instructions

  1. Mix your meat: In a large mixing bowl, combine the ground beef, ground pork, chopped onions, minced garlic, bread crumbs, grated Parmesan, thyme, salt, and pepper. Use your hands to mix gently until just combined.
  2. Form and brown the meatballs: Shape the mixture into meatballs about 1 to 1.5 inches in diameter. Heat a skillet over medium-high heat, adding a splash of oil. Carefully add the meatballs, browning them on all sides (about 3-4 minutes), then transfer them to the crock pot.

  4. Deglaze the pan: Pour a splash of beef broth into the skillet, scraping the bottom to release those delicious bits. This adds flavor and richness to the broth in your crock pot.
  5. Combine: Pour the sautéed onions and deglazed liquid over the meatballs in the crock pot. Then, add the remaining beef broth, ensuring that meatballs are mostly submerged.
  6. Set your crock pot: Cover and cook on low for 6-8 hours or on high for about 4 hours.
  7. Serve with cheese: About 15 minutes before serving, sprinkle shredded cheese over the meatballs and cover. Let it melt beautifully.
