Description
These lemon butter cookies are zesty, soft, and melt-in-your-mouth delicious, perfect for sharing joyful moments with family and friends.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 cups all-purpose flour
- 2 tablespoons lemon zest
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream the butter and sugar in a mixing bowl until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then mix in the lemon zest, juice, and vanilla extract until combined.
- In another bowl, whisk together the flour and baking powder before gradually adding to the butter mixture. Stir gently until just integrated.
- Scoop the dough onto prepared baking sheets, leaving some space between each scoop. Chill dough for 30 minutes if a puffier cookie is preferred.
- Bake for 12-15 minutes until edges are lightly golden, with slightly underbaked centers that will firm up as they cool.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
For a dairy-free version, substitute butter with coconut oil or vegan butter. For gluten-free, use almond flour and adjust liquids accordingly.
