- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream or Greek yogurt
- 1 tsp vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 tsp salt
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare your crust: In a bowl, combine the graham cracker crumbs with melted butter and sugar until mixed. Press the mixture firmly into the bottom of your lined muffin tins or mini cheesecake pans.
- Mix the filling: In a large bowl, beat the cream cheese until smooth. Gradually add sugar, mixing until fluffy. Blend in eggs, sour cream, and vanilla extract until you achieve a silky consistency.
- Pour the filling over your crusts, filling each cup about 3/4 full.
- Bake for about 18-20 minutes or until the edges are set but the centers remain slightly jiggly.
- Cool completely, then refrigerate for at least 4 hours or overnight.
- Serve: Top with your favorite fruits, chocolate sauce, or enjoy them plain.
Notes
For the best results, avoid overmixing the filling and allow the cheesecakes to cool slightly before refrigerating to prevent cracks.
