Description

Sweet and creamy mini red velvet cheesecakes with a rich chocolatey flavor, perfect for special occasions.


Ingredients

  • 8 oz cream cheese (full-fat)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 2 tbsp cocoa powder
  • 12 tbsp red food coloring
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (melted)
  • Crushed graham crackers for crust

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Prepare a muffin pan with cupcake liners.
  3. Make the crust by mixing crushed graham crackers and melted butter; press into the bottom of each liner.
  4. In a large bowl, beat cream cheese until smooth. Gradually add sugar and mix until creamy.
  5. Add eggs one at a time, mixing slowly.
  6. Incorporate cocoa powder, vanilla, and red food coloring.
  7. Sift in flour and mix until combined.
  8. Pour filling over the crust in each liner; tap to release air bubbles.
  9. Bake for 18-20 minutes until edges are set but centers jiggle.
  10. Cool in the pan for 10 minutes, then refrigerate for at least 4 hours.
  11. Serve chilled, topped with whipped cream or cocoa powder.
