Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 cups apples, peeled and diced (Fuji or Honeycrisp)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan.
  2. Prepare the apples by peeling, coring, and dicing them into small pieces.
  3. Mix the dry ingredients in a medium bowl: whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
  4. Combine in a separate bowl the sugar, eggs, melted butter, and milk.
  5. Blend the wet mixture with the dry ingredients until just combined.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

These muffins store well in an airtight container for several days and freeze beautifully for later enjoyment.
