Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 cups apples, peeled and diced (Fuji or Honeycrisp)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin pan.
- Prepare the apples by peeling, coring, and dicing them into small pieces.
- Mix the dry ingredients in a medium bowl: whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
- Combine in a separate bowl the sugar, eggs, melted butter, and milk.
- Blend the wet mixture with the dry ingredients until just combined.
- Fill each muffin cup about two-thirds full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
Notes
These muffins store well in an airtight container for several days and freeze beautifully for later enjoyment.
