Description

A creamy, savory casserole made with fresh green beans, sautéed mushrooms, and topped with crispy fried onions, perfect for family gatherings.

Ingredients

Scale
  • 1 pound green beans, fresh or frozen
  • 8 ounces mushrooms, sliced (button or cremini)
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup fried onions
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • A dash of nutmeg

Instructions

  1. Prepare the green beans by rinsing and trimming the ends. Blanch in boiling water for 3-5 minutes, then plunge into an ice bath.
  2. Sauté sliced mushrooms and minced garlic in butter or olive oil over medium heat for 8-10 minutes until golden brown.
  3. In a mixing bowl, combine the cream of mushroom soup and sour cream, then gently stir in the sautéed mushrooms.
  4. In a baking dish, mix blanched green beans with the creamy sauce. Spread evenly and top with fried onions.
  5. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until bubbling and golden.
  6. Let it sit for 5 minutes before serving hot.

Notes

For a lighter version, substitute light sour cream and consider using panko breadcrumbs for topping instead of fried onions.
