- 1 pound green beans, fresh or frozen
- 8 ounces mushrooms, sliced (button or cremini)
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup sour cream
- 1 cup fried onions
- 2 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- A dash of nutmeg
Instructions
- Prepare the green beans by rinsing and trimming the ends. Blanch in boiling water for 3-5 minutes, then plunge into an ice bath.
- Sauté sliced mushrooms and minced garlic in butter or olive oil over medium heat for 8-10 minutes until golden brown.
- In a mixing bowl, combine the cream of mushroom soup and sour cream, then gently stir in the sautéed mushrooms.
- In a baking dish, mix blanched green beans with the creamy sauce. Spread evenly and top with fried onions.
- Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until bubbling and golden.
- Let it sit for 5 minutes before serving hot.
Notes
For a lighter version, substitute light sour cream and consider using panko breadcrumbs for topping instead of fried onions.
