Description

A vibrant and flavorful Mediterranean dip made with roasted red peppers, walnuts, and a blend of spices, perfect for gatherings and snacking.


Ingredients

  • 2 cups roasted red peppers
  • 1 cup walnuts
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Optional: pomegranate molasses

Instructions

  1. Roast the peppers until the skin is blistered; let them steam and then peel.
  2. Toast the walnuts in a skillet over medium heat until fragrant.
  3. Blend the roasted peppers, walnuts, garlic, olive oil, cumin, paprika, and lemon juice until smooth.
  4. Season the dip with salt and pepper to taste; adjust spices as desired.
  5. Chill for at least 1 hour before serving; garnish with olive oil and paprika if desired.

Notes

Serve with fresh vegetables, crostini, or as a sandwich spread. Keeps well in the fridge for up to a week.
