Ingredients

- 2 cups roasted red peppers
- 1 cup walnuts
- 2 cloves garlic
- 3 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Optional: pomegranate molasses
Instructions
- Roast the peppers until the skin is blistered; let them steam and then peel.
- Toast the walnuts in a skillet over medium heat until fragrant.
- Blend the roasted peppers, walnuts, garlic, olive oil, cumin, paprika, and lemon juice until smooth.
- Season the dip with salt and pepper to taste; adjust spices as desired.
- Chill for at least 1 hour before serving; garnish with olive oil and paprika if desired.
Notes
Serve with fresh vegetables, crostini, or as a sandwich spread. Keeps well in the fridge for up to a week.
