Ingredients

  • 1 teaspoon salt
  • 1 cup unsalted butter, cold
  • 1 tablespoon ice water (plus more as needed)
  • 4 cups fresh cranberries (or thawed frozen)
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • Zest of 1 orange
  • 1 egg (for egg wash)

Instructions

  1. Prepare the crust: In a large mixing bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough holds together. Shape into disks, wrap, and refrigerate for at least an hour.
  2. Make the filling: In a saucepan, combine cranberries, sugar, cornstarch, and orange zest. Stir over medium heat until cranberries begin to burst—about 10 minutes. Remove from heat and let cool slightly.
  3. Assemble the pie: Preheat oven to 375°F (190°C). Roll one dough disk to fit pie pan, place in pie dish, and fill with cranberry mixture. Cover with second rolled-out disk and crimp edges. Cut slits in the top crust.
  4. Bake the pie: Brush top crust with egg wash. Bake for 35-40 minutes or until crust is golden brown and filling is bubbly.
  5. Cool the pie: Allow to cool for at least one hour before slicing. Serve with vanilla ice cream or whipped cream.

Notes

Chill your ingredients well for a flakier crust. Allow the pie to cool to set the filling properly.
