  • 4 cups sliced nectarines
  • 4 cups sliced plums
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • Pinch of nutmeg
  • 2 ½ cups all-purpose flour (for crust)
  • 1 tsp salt
  • 1 cup unsalted butter
  • Ice water (as needed)

Instructions

  1. Prepare the pie crust: In a medium bowl, mix 2 ½ cups of flour with 1 tsp of salt. Cut in 1 cup of butter until crumbly. Gradually add ice water until dough forms. Wrap and chill for 30 minutes.
  2. Make the filling: Combine 4 cups of nectarines and 4 cups of plums in a large bowl. Stir in sugars, flour, lemon juice, cinnamon, and nutmeg. Let sit for 10 minutes.
  3. Roll out the dough: Divide chilled dough in half, roll out one half to fit the pie dish, and press it into the dish.
  4. Assemble the pie: Pour the fruit filling into the crust and roll out the second half of the dough to cover it, sealing the edges.
  5. Bake the pie: Preheat oven to 425°F (220°C). Bake for 15 minutes, then reduce to 350°F (175°C) and bake for 35-45 minutes until bubbly and golden.
  6. Cool and serve: Let the pie cool for 2 hours before slicing. Serve warm or at room temperature, optionally with ice cream.

Using ripe fruits is crucial for the best flavor. Allow the pie to cool completely before slicing for neat pieces.
