Ingredients

  • 1 cup old-fashioned oats
  • 1 cup fresh or dried cranberries
  • 1 cup chopped walnuts
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: in a large bowl, combine flour, oats, baking soda, and salt.
  3. Cream butter and sugars in another bowl until light and fluffy.
  4. Add eggs one at a time, then mix in the vanilla extract.
  5. Combine wet and dry ingredients, stirring until just mixed.
  6. Stir in cranberries and walnuts until evenly distributed.
  7. Scoop dough onto a baking sheet lined with parchment, leaving space in between.
  8. Bake for 10 to 12 minutes until the edges are golden.
  9. Cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For a vegan version, use a flaxseed egg instead of a regular egg. Feel free to substitute walnuts with pecans.
