- 1 cup old-fashioned oats
- 1 cup fresh or dried cranberries
- 1 cup chopped walnuts
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Mix dry ingredients: in a large bowl, combine flour, oats, baking soda, and salt.
- Cream butter and sugars in another bowl until light and fluffy.
- Add eggs one at a time, then mix in the vanilla extract.
- Combine wet and dry ingredients, stirring until just mixed.
- Stir in cranberries and walnuts until evenly distributed.
- Scoop dough onto a baking sheet lined with parchment, leaving space in between.
- Bake for 10 to 12 minutes until the edges are golden.
- Cool on the baking sheet for a few minutes before transferring to wire racks.
Notes
For a vegan version, use a flaxseed egg instead of a regular egg. Feel free to substitute walnuts with pecans.
