Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, beating until just combined.
  4. Divide the dough into two discs, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  5. Roll out the dough on a floured surface to about 1/4 inch thick, cut into desired shapes, and place on prepared baking sheets.
  6. Bake for 8-10 minutes or until edges are lightly golden. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
