  • 23 tbsp chopped Calabrian chilis

Instructions

  1. Boil a large pot of salted water and cook the pappardelle until al dente; reserve 1 cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat and crumble in the Italian sausage. Cook until browned.
  3. Add minced garlic to the skillet and sauté for another minute.
  4. Stir in crushed tomatoes and chopped Calabrian chilis. Simmer for 10-15 minutes, adjusting with reserved pasta water as needed.
  5. Toss the drained pappardelle into the sauce, ensuring it is well coated. Add fresh herbs for flavor.
  6. Serve in bowls, finishing with a drizzle of olive oil, Parmesan, and chili flakes.
