- 12 oz pappardelle pasta
- 2 tbsp olive oil
- 1 lb Italian sausage
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2–3 tbsp chopped Calabrian chilis
- Fresh basil or parsley, for garnish
- Grated Parmesan cheese, for serving
Instructions
- Boil a large pot of salted water and cook the pappardelle until al dente; reserve 1 cup pasta water before draining.
- In a large skillet, heat olive oil over medium heat and crumble in the Italian sausage. Cook until browned.
- Add minced garlic to the skillet and sauté for another minute.
- Stir in crushed tomatoes and chopped Calabrian chilis. Simmer for 10-15 minutes, adjusting with reserved pasta water as needed.
- Toss the drained pappardelle into the sauce, ensuring it is well coated. Add fresh herbs for flavor.
- Serve in bowls, finishing with a drizzle of olive oil, Parmesan, and chili flakes.
Notes
Feel free to swap the sausage type and adjust spices according to your preference. Serve with a side salad or crusty bread.
