A delightful and comforting taco bake using flaky Pillsbury crescent rolls, seasoned ground beef, fresh vegetables, and gooey cheese.

- 1 tube Pillsbury Crescent Rolls
- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 1 cup diced bell peppers
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1 onion, diced (optional)
- Sour cream for garnish
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned. Add taco seasoning and bell peppers, cooking until the peppers are tender.
- Stir in diced tomatoes and let everything simmer for a few minutes.
- Open the Pillsbury Crescent Rolls and unroll the dough, placing it in a baking dish to cover the bottom.
- Spoon the taco meat mixture over the crescent dough, spreading evenly.
- Sprinkle shredded cheese over the meat mixture.
- Fold the edges of the crescent rolls over the filling and bake for 25-30 minutes until golden and cheese is melted.
- Let it cool for a few minutes, then garnish with sour cream and fresh cilantro.
- Cut into squares and serve warm.
Notes
For a meatless version, substitute ground meat with black beans and add more vegetables like zucchini or mushrooms.
