Instructions
- Prepare the Pistachios: Finely chop the shelled pistachios until resembling coarse flour.
- Make the Cookie Dough: Cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well. Gradually incorporate flour and chopped pistachios.
- Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
