- 1/2 cup unsalted butter, melted
- 2 large eggs
- 8 oz cream cheese, room temperature
- 1/2 cup pistachio paste
- 1 cup powdered sugar
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the cake mix, melted butter, and one egg. Mix until crumbly; this will be your crust. Press it evenly into the bottom of your baking dish.
- In another bowl, beat together the cream cheese, pistachio paste, the remaining eggs, powdered sugar, and vanilla. Mix until smooth and creamy.
- Pour the cream cheese mixture over the crust, spreading it evenly.
- Bake for 35-40 minutes or until the center is set yet slightly gooey. A toothpick inserted should come out with a few moist crumbs attached.
- Let the cake cool before slicing. Dust with powdered sugar or top with whipped cream before serving.
