Description

A comforting and flavorful Polish Dill Soup, filled with tender potatoes, sweet carrots, and fresh dill, perfect for family gatherings.

Ingredients

Scale
  • 4 medium Potatoes (Yukon Gold or Russet), peeled and diced
  • 2 medium Carrots, diced
  • 1 medium Onion, finely chopped
  • 1 cup Fresh Dill, chopped
  • 4 cups Broth (Vegetable or Chicken)
  • 2 tablespoons Butter
  • 1/2 cup Cream (optional)

Instructions

  1. Prep your ingredients: Start by peeling and dicing the potatoes and carrots. Finely chop the onion and dill, setting them aside.
  2. Heat your skillet: In a large pot over medium heat, melt 2 tablespoons of butter. Once bubbly, add the chopped onions. Sauté until they become translucent—about 5 minutes.
  3. Add the root veggies: Toss in the diced potatoes and carrots. Stir everything together, letting the vegetables mingle for another 5 minutes.
  4. Pour the broth: Add in about 4 cups of your chosen broth. Bring to a gentle simmer, then let it cook for about 20 minutes.
  5. Finish with dill and cream: Once the potatoes are cooked, remove the pot from heat and stir in the fresh dill and cream.
  6. Season to taste: Finally, season well with salt and pepper, tasting as you go!
  7. Serve and savor: Ladle the soup into bowls, garnishing with extra dill for a beautiful presentation.

Notes

For a lighter version, skip the cream. Serve with crusty bread or a light salad for a complete meal.
