- 1 cup Fresh Dill, chopped

- 1/2 cup Cream (optional)
Instructions
- Prep your ingredients: Start by peeling and dicing the potatoes and carrots. Finely chop the onion and dill, setting them aside.
- Heat your skillet: In a large pot over medium heat, melt 2 tablespoons of butter. Once bubbly, add the chopped onions. Sauté until they become translucent—about 5 minutes.
- Add the root veggies: Toss in the diced potatoes and carrots. Stir everything together, letting the vegetables mingle for another 5 minutes.
- Pour the broth: Add in about 4 cups of your chosen broth. Bring to a gentle simmer, then let it cook for about 20 minutes.
- Finish with dill and cream: Once the potatoes are cooked, remove the pot from heat and stir in the fresh dill and cream.
- Season to taste: Finally, season well with salt and pepper, tasting as you go!
