- 1 delicata squash
- 2 tablespoons pomegranate molasses
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- Fresh herbs (thyme or parsley)

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the delicata squash in half lengthwise and scoop out the seeds.
- Slice the squash into half-moons about 1 inch thick.
- Combine the sliced squash with olive oil, minced garlic, salt, and pepper in a mixing bowl.
- Arrange the seasoned squash on a parchment-lined baking sheet in a single layer.
- Roast for about 25-30 minutes, flipping halfway through, until golden brown and tender.
- Drizzle the pomegranate molasses over the squash and mix gently.
- Return to the oven for an additional 5 minutes.
- Sprinkle fresh herbs over the top before serving.
- Serve warm.
