Ingredients

  • 2 tablespoons pomegranate molasses

  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the delicata squash in half lengthwise and scoop out the seeds.
  3. Slice the squash into half-moons about 1 inch thick.
  4. Combine the sliced squash with olive oil, minced garlic, salt, and pepper in a mixing bowl.
  5. Arrange the seasoned squash on a parchment-lined baking sheet in a single layer.
  6. Roast for about 25-30 minutes, flipping halfway through, until golden brown and tender.
  7. Drizzle the pomegranate molasses over the squash and mix gently.
  8. Return to the oven for an additional 5 minutes.
  9. Sprinkle fresh herbs over the top before serving.
  10. Serve warm.
