- 1 cup pomegranate juice (freshly squeezed or 100% juice)
- 2 tablespoons sumac spice
- 4 cloves garlic (minced)
- 2 tablespoons olive oil
- Fresh herbs (parsley, cilantro, or mint)
- Pomegranate seeds (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine pomegranate juice, olive oil, minced garlic, and sumac. Add the chicken pieces and marinate for at least 30 minutes.
- Line a baking sheet with parchment paper and arrange marinated chicken pieces skin-side up.
- Roast for about 35-40 minutes, or until golden brown and cooked through to an internal temperature of 165°F (75°C).
- Garnish with fresh herbs and pomegranate seeds before serving.
