Description

Deliciously soft cookies that capture the essence of autumn with pumpkin, cinnamon, and nutmeg.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together softened butter and sugars until fluffy. Beat in the egg and pumpkin puree.
  3. Combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just incorporated.
  5. Scoop rounded mounds of dough onto a lined baking sheet with space between them.
  6. Bake for 12-15 minutes, or until edges are lightly golden.
  7. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Resist the urge to over-bake; slightly under-baked cookies will continue to cook on the baking sheet.
