- 1 cup pumpkin puree
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 large egg
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together softened butter and sugars until fluffy. Beat in the egg and pumpkin puree.
- Combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring until just incorporated.
- Scoop rounded mounds of dough onto a lined baking sheet with space between them.
- Bake for 12-15 minutes, or until edges are lightly golden.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Resist the urge to over-bake; slightly under-baked cookies will continue to cook on the baking sheet.
