Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix the dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, spices, and salt.
- Cream the butter and sugars until light and fluffy, about 3-5 minutes.
- Add the eggs and vanilla to the butter mixture and mix until just combined.
- Combine dry and wet ingredients, then gently fold in pumpkin puree and white chocolate chips.
- Scoop rounded dough onto baking sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes until edges are golden and centers are slightly soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra chewy cookies, chill the dough for 30 minutes before baking and underbake slightly for a softer texture.
