- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 tsp vanilla extract
- 1/4 cup brewed espresso or strong coffee
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the pumpkin purée and the egg, mixing until fully incorporated.
- Combine the flour, baking soda, baking powder, and spices in a separate bowl.
- Gradually add the dry mixture into the wet ingredients, stirring until just combined.
- Stir in the brewed coffee and vanilla extract until evenly distributed.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Cool for 5 minutes on the baking sheet before transferring to a wire rack and drizzle with icing if desired.
Notes
Cookies can be stored in an airtight container at room temperature for up to a week. They freeze well for up to three months.
