Description

Ingredients

  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp vanilla extract
  • 1/4 cup brewed espresso or strong coffee

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the pumpkin purée and the egg, mixing until fully incorporated.
  4. Combine the flour, baking soda, baking powder, and spices in a separate bowl.
  5. Gradually add the dry mixture into the wet ingredients, stirring until just combined.
  6. Stir in the brewed coffee and vanilla extract until evenly distributed.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Cool for 5 minutes on the baking sheet before transferring to a wire rack and drizzle with icing if desired.
