Description

Delightful cookies made with peanut butter and topped with chocolate kisses, perfect for Valentine’s Day.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 36 chocolate kisses

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the peanut butter, egg, and vanilla extract until well blended.
  4. Whisk together the flour and baking soda in a separate bowl, then gradually incorporate it into the wet mixture.
  5. Portion out the dough, roll it into balls, and then roll each ball in granulated sugar.
  6. Bake for 10-12 minutes until golden at the edges but still soft in the center.
  7. Press a chocolate kiss into the center of each cookie as soon as they come out of the oven.
  8. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For a gluten-free option, swap all-purpose flour for a gluten-free blend. You can also use coconut sugar instead of granulated sugar.
