- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 36 chocolate kisses
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the peanut butter, egg, and vanilla extract until well blended.
- Whisk together the flour and baking soda in a separate bowl, then gradually incorporate it into the wet mixture.
- Portion out the dough, roll it into balls, and then roll each ball in granulated sugar.
- Bake for 10-12 minutes until golden at the edges but still soft in the center.
- Press a chocolate kiss into the center of each cookie as soon as they come out of the oven.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For a gluten-free option, swap all-purpose flour for a gluten-free blend. You can also use coconut sugar instead of granulated sugar.
